The Carlsbad Senior Center serves over 61,000 meals a year, more than any other senior center in the country. The center’s menu has been revamped and includes new dishes each year. In 2013, its catering menu was introduced. For those who are gluten-free, meals are offered for those with celiac disease who might not have a diagnosis. In this article, the Center’s food and catering coordinator, Cathy Gaddis, shares her thoughts on the new menu, what to eat and how to prepare meals.

CULINARY INGREDIENTS: The new menu includes a variety of new dishes that are tasty but will help reduce the sodium in your diet, according to the nutritionist. These include shrimp and grits, mac and cheese, lasagne and Italian meatballs. The pasta is thicker than in the past, and will not give you a cramp. The center’s new seafood will be grilled fresh and served with a special sauce.

CULINARY TIP: The new menu is also gluten-free. To that end, staff have added the Mediterranean salad and the Mexican-flavored sandwich. “The seafood is always a hit, even on weeknights,” Gaddis stated. “We have great people, and the guests always rave.

CULINARY FEATURES: The center’s new dinner menu features more desserts and fresh entrees than in the past. These include the new mac and cheese from the chefs at the Carlsbad Italian Food Hall, The Carlsbad Pizza Lounge and The Pinnacle Steakhouse. Gaddis explained that it takes time to produce these dishes, so they can only be offered during special events.

SALAD: After dinner, guests are given a salad with pasta and meat, while a small appetizer is always available.

DINNERS: The salad bar has been expanded and a vegetarian dish is under development.

EAT: Gaddis stresses the importance of having a variety of ethnic food available at other restaurants. There are also more pasta dishes and the steak and seafood are new.

DINNER: This is Gaddis’ favorite night of the week. She noted that there are many special events and they try to accommodate everyone. “It’s a family environment here.

Article Title: Rick Saldivar at Seaside Senior Center | Programming. Full Article Text: For the most part, the seniors here at Seaside Senior are a bit older. Most are nearing retirement age, but in some cases they can’t imagine themselves that far away. Many of these seniors are looking forward to the return of summer, so they’ll need things to keep them busy in the summer months.

This past month the seniors made a trip to Seaside Senior Center, and as you might guess, a big reason for this trip was to get some work done. But of course, the senior center was also a good place to spend some time with some of our other senior service providers who helped us serve a growing number of seniors.

Last summer we celebrated the 20th Anniversary of our Seaside Senior Center thanks to the efforts of our service providers. We spent the first half of the year focusing our service efforts on the physical program elements of Seaside Senior. At the beginning of the new school year, however, we wanted to make that focus even more clear as we worked together to make sure that all our seniors have the things they need to continue and thrive this summer at Seaside Village and Seaside Senior Center. The summer of 2013 will feature the expansion of program elements into those areas that we’ve been delivering on in the past – the senior centers, the health and wellness services, and the adult educational services. This summer will also be a good time for us to begin to look at our program options in the areas of special needs and dementia services, in addition to services we have for our seniors in general, and to look at options for seniors and their families that we’ve been developing for some time.

One thing that our seniors are most interested in is health. We will continue to focus our health and wellness services on the senior population and will offer a variety of services and programs to help seniors remain healthy and independent; programs that make it easy for seniors and their families to maintain their health; and programs that make it easy for seniors to maintain their independence by using the most current information about what will help them to remain healthy. The summer of 2013 will also include offering our new program services designed for aging parents and caregivers, and for seniors and their families, and to work on our plan for expanding and strengthening our adult education and Alzheimer’s services.
